Stir together first 6 ingredients in a small bowl.

Rub garlic, sage, and spice mixture on all sides of steak; drizzle with olive oil. Let stand 1 hour.

Grill steak over 350 degrees to 400 degrees for 8 minutes on each side or to desired degree of doneness. Let rest 5 minutes; slice diagonally across the grain into thin strips.
