Yams, Potatoes, and Apples (Batch)

Peel yams, cut into one inch chunks, and boil until just tender. Peel and cut apples into 1 inch dice. Cook bacon on sheet pan in oven and rough chop. Coat yams and apples with olive oil, salt and pepper and roast in 350 degree oven until light golden. Combine with bacon. Serve as a side dish.
