GUINNESS™ Stouties Salad with Sunflower Mustard Vinaigrette

Cook GUINNESS™ Stouties per box instructions.

In a medium bowl, whisk dijon mustard, vinegar, olive oil, and sunflower oil; season with salt and pepper. Place in a 1-pint jar and shake vigorously to combine. Refrigerate until ready to use.

Using a sauté pan, heat couscous & red grains with oil or butter. When fully cooked (4-5 minutes) place in refrigerator to cool (serve cold).

In a bowl combine spring mix, couscous & red grains. Add cherry tomatoes and artichokes. Top with dressing until evenly coated. Place Stouties on top of salad and serve.
