Pumpkin Snickerdoodle Ice Cream Cookie Sandwiches

Kemps Pumpkin Ice Cream 755785 3/4 cup
Best Maid 1 oz. Snickerdoodle Cookie Dough 738310 6 each
Fisher Walnuts, Finely Chopped 430612 1/4 cup
Mini Chocolate Chips 314898 1/4 cup

Bake cookies according to manufacturer’s specifications. To assemble ice cream sammies, scoop ¼ cup ice cream onto the flat side of one cookie. Top with another cookie, flat side down, and press to adhere the two together.

If desired, roll the edges in mini chocolate chips or finely chopped walnuts. Serve immediately, or freeze in an airtight container.
