Place 4 slices of bread, buttered side down, on grill. Spread thin layer of chipotle mayo and place a slice of cheese on each slice of grilled bread.
Divide corned beef on 2 bottom slices of bread.
Top corned beef with sauerkraut. Top with 2nd slice of bread & grill both sides until crispy. Serve immediately.
