Microwave a single ossobuco for about 5 minutes. Place ossobuco in a 375°F oven for 5-6 minutes to brown it.
Roast mirepoix until lightly golden.
To heat mashed potatoes, follow manufacturer’s instructions and hold in steam table or food warmer.
Plate attractively and add 4 oz. of demi glace.
