Carefully slice down the length of the vanilla bean and scrape out the pulp.

In a bowl, mix ricotta, sugar, and vanilla bean pulp, then transfer to pastry bag with medium star tip.

Pipe the desired amount into thawed donut hole then top with desired ingredients. Garnish with powdered sugar.
