Mix cowboy rub, BBQ seasoning and cayenne pepper together.
Peel the membrane off the back rib and evenly. Rest the seasoned ribs for 30 minutes before placing into a 250 degree smoker.
Smoke ribs for about 2 hours. Take ribs out of the smoker and place on aluminum foil. Drizzle one ounce of cider vinegar, one ounce honey and two ounces of butter on reach rib.
Wrap the foil tight around each rib and place back in the smoker for about 1.5 hours. Again, remove the ribs from the smoker and take out the foil.
Glaze each rib with 3 ounces of BBQ sauce and place back into smoker for another 30-45 minutes or until the BBQ glaze is tacky and the ribs are tender.
