Bake cookies according to the package and allow to cool.
Place a scoop of ice cream between two cookies and gently press together.
Place the sandwiches on a baking sheet and freeze for about 30 minutes to firm up.
In a microwave-safe bowl, melt the chocolate chips on a double boiler.
Remove the ice cream sandwiches from the freezer and dip them halfway into the melted chocolate.
Place the dipped sandwiches back in the freezer for at least 15 minutes to allow the chocolate to harden. Serve and enjoy.
