Deep fry the potato cubes until golden. Combine diced peppers, bacon, and onion. Sauté in pan until cooked through. Add potato and Montreal seasoning and toss. Mix hollandaise and whisk chipotle concentrate until incorporated and smooth. Poach eggs. Assemble by placing potato mixture on serving plate, top with eggs and hollandaise.
