Rinse and cook black rice, set aside. Remove bulbs (edible portion) from the jack fruit, and seeds from the bulbs. Cut the jack fruit bulbs into small julienne strips, set aside. Clean and cut bok choy into bite size pieces, set aside. Remove avocado from skin, remove the pit and slice 1/2 of avocado into strips. In small bowl, combine the bok choy, rice, jack fruit, lime juice, and sesame ginger dressing and mix thoroughly. Place decoratively in bowl and garnish with fanned out avocado and cilantro. Serve immediately.
