Combine coffee and Livia’s seasoning and season the short ribs evenly. Let rest for 3-4 minutes and sear until the short ribs have a nice crust. Place in 1/2 hotel pan.
In a stock pot, place the bourbon with chipotle and garlic on low heat until reduced by half. Add water and demi glaze paste and whip until paste has dissolved and sauce has thickened.
Pour sauce over the short ribs, cover and braise in a 300 degree oven for about 3-4 hours
