In large bowl, add hard boiled eggs, mayonnaise, yellow mustard, kosher salt and black pepper. Use potato masher to mix until smooth. Add additional salt and pepper to taste.

Top each bagel with egg salad, 2 slices of bacon, 2 slices of tomato, and small handful of baby arugula.
