Thinly slice red onion and add to a bowl with vinegar and sugar; cover and let sit overnight to make pickled red onions.

Mix curry into yellow mustard to make curry mustard and let sit for 1 hour.

Grill brat on a grill or flattop until fully cooked.

To assemble, place brat in bun and top with pickled red onions, curry mustard, and micro cilantro. Serve with potato chips.
