Cut slab bacon into 1 oz. cubes. Place in covered hotel pan and cook at 250°F for 1.5 hours. Take out of oven and allow to cool.
Combine flour and Cowboy Rub, dredge bacon until evenly coasted and shake off extra flour.
Place in deep fryer for 2-3 minutes until crisp. Remove from fryer and toss in the hot honey mixture.
Bake for 3-4 minutes in 400°F oven to set the sauce. Place in serving bowl and garnish with green onions and an extra shake of Cowboy Rub.
