Combine scoopable cheesecake and green food coloring and whip until well blended and a smooth consistency. Put mixture in piping bag.
Combine dry Jello mixture and pumpkin spice in medium sized bowl. Toss mini donuts in this mixture until evenly coated.
With a star tip, pipe about 3/4 ounce of cheesecake mixture on top of each donut. Allow to rest in cooler for 2-3 hours for the Jello and pumpkin spice to absorb into donut and brighten in color.
