Avocado crema: add avocado, sour cream, cilantro, lime juice, a large pinch of salt, and a splash of water to a food processor. Process until smooth, and season to taste with salt. Prepare the cornbread pancakes and fill with pulled beef brisket, avocado crema, scrambled eggs, diced tomatoes and white onions, and garnish with cilantro.
